Ingredients

  • 1 cup coconut milk
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Chopped scallions and peanuts for garnish

Instructions

  1. In a medium-sized mixing bowl, whisk together the coconut milk, peanut butter, soy sauce, honey, minced garlic, grated ginger, lime juice, salt, and pepper until smooth.
  2. Place the chicken breast in the crockpot and pour the sauce over it, ensuring it’s well coated.
  3. Cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and easy to shred.
  4. Use two forks to shred the chicken in the crockpot, mixing it into the sauce.
