Instructions
- In a medium-sized mixing bowl, whisk together the coconut milk, peanut butter, soy sauce, honey, minced garlic, grated ginger, lime juice, salt, and pepper until smooth.
- Place the chicken breast in the crockpot and pour the sauce over it, ensuring it’s well coated.
- Cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and easy to shred.
- Use two forks to shred the chicken in the crockpot, mixing it into the sauce.
- Serve over rice or noodles, garnished with chopped scallions and crunchy peanuts.
