Description
A comforting, dairy-free take on the classic Chicken Alfredo, featuring creamy sauce and gluten-free farfalle.
Ingredients
Scale
- 1 1/4 lbs Chicken breast (diced small)
- 1 3/4 tsp sweet smoked paprika
- 1 1/2 tsp oregano
- 1 1/2 tsp garlic powder
- 1/2 tsp thyme
- 1/2 tsp black pepper
- 1/2 tsp salt
- 12 oz gluten-free farfalle
- 4 tbsp dairy free butter
- 2 tbsp minced onion
- 2 tsp Italian seasoning
- 1 tsp garlic powder
- 1/2 tsp salt
- 2 cups chicken broth
- 1 2/3 tbsp gluten free 1:1 flour
- 2 cups dairy free heavy cream
- 2 cups chopped spinach
- 8 oz dairy free parmesan (shredded)
- 2 tbsp pasta water (as needed)
Instructions
- Bring a large pot of water to a rolling boil. Salt the water generously and add farfalle, cooking until al dente. Drain, reserving about 1 cup of pasta water.
- In a small bowl, combine chicken with seasonings. Toss until coated.
- Heat a skillet over medium heat with olive oil. Sear chicken until golden and cooked through, then remove to keep warm.
- In the same skillet, melt dairy free butter and add minced onion with seasonings. Cook until onion is translucent.
- Sprinkle in gluten free flour to create a roux, then gradually whisk in chicken broth and dairy free heavy cream until smooth.
- Add chopped spinach and simmer until wilted, then stir in dairy-free parmesan until melted.
- Add cooked farfalle, tossing to coat with the sauce, adding reserved pasta water as needed.
- Fold in seared chicken and warm everything together before serving.
Notes
For a thicker sauce, add more gluten-free flour; for a looser sauce, add reserved pasta water a tablespoon at a time.
