Description

A comforting, dairy-free take on the classic Chicken Alfredo, featuring creamy sauce and gluten-free farfalle.


Ingredients

  • 1 1/4 lbs Chicken breast (diced small)
  • 1 3/4 tsp sweet smoked paprika
  • 1 1/2 tsp oregano
  • 1 1/2 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 12 oz gluten-free farfalle
  • 4 tbsp dairy free butter
  • 2 tbsp minced onion
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 2 cups chicken broth
  • 1 2/3 tbsp gluten free 1:1 flour
  • 2 cups dairy free heavy cream
  • 2 cups chopped spinach
  • 8 oz dairy free parmesan (shredded)
  • 2 tbsp pasta water (as needed)

Instructions

  1. Bring a large pot of water to a rolling boil. Salt the water generously and add farfalle, cooking until al dente. Drain, reserving about 1 cup of pasta water.
  2. In a small bowl, combine chicken with seasonings. Toss until coated.
  3. Heat a skillet over medium heat with olive oil. Sear chicken until golden and cooked through, then remove to keep warm.
  4. In the same skillet, melt dairy free butter and add minced onion with seasonings. Cook until onion is translucent.
  5. Sprinkle in gluten free flour to create a roux, then gradually whisk in chicken broth and dairy free heavy cream until smooth.
  6. Add chopped spinach and simmer until wilted, then stir in dairy-free parmesan until melted.
  7. Add cooked farfalle, tossing to coat with the sauce, adding reserved pasta water as needed.
  8. Fold in seared chicken and warm everything together before serving.

Notes

For a thicker sauce, add more gluten-free flour; for a looser sauce, add reserved pasta water a tablespoon at a time.
