Ingredients

- 1 onion, finely chopped
- 1 cup cherry tomatoes, halved
- 1/2 bell pepper (paprika), diced
- Oregano, to taste
- Salt, to enhance flavors
- 2 teaspoons tomato paste
- 200 ml heavy cream
- 100 ml reserved cooking water
- Pasta of your choice
- Parmesan cheese, grated
- Fresh basil for topping
- Extra-virgin olive oil for sautéing
- A clove of garlic (optional)
- Freshly ground black pepper (to taste)
- Butter (optional)
Instructions
- Bring a large pot of salted water to a boil and cook the pasta until al dente, reserving 100 ml of cooking water before draining.
- In a large skillet, heat olive oil over medium heat and sauté the onion until soft, about 4-6 minutes.
- Add cherry tomatoes and diced paprika, cooking until tomatoes soften, about 5 minutes.
- Stir in oregano and salt, then add tomato paste, cooking for a minute.
- Pour in heavy cream and reserved pasta water, then simmer until thickened, adjusting seasonings as needed.
- Toss drained pasta into the skillet, coating it well with the sauce, adding more pasta water if necessary.
- Serve topped with freshly grated Parmesan and basil leaves.
Notes
Reserve pasta water for adjusting sauce consistency and ensure pasta is al dente for best texture.
