Description

A comforting pasta dish with a silky tomato-cream sauce, bursting with fresh flavors.


Ingredients

  • 1 onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 bell pepper (paprika), diced
  • Oregano, to taste
  • Salt, to enhance flavors
  • 2 teaspoons tomato paste
  • 200 ml heavy cream
  • 100 ml reserved cooking water
  • Pasta of your choice
  • Parmesan cheese, grated
  • Fresh basil for topping
  • Extra-virgin olive oil for sautéing
  • A clove of garlic (optional)
  • Freshly ground black pepper (to taste)
  • Butter (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente, reserving 100 ml of cooking water before draining.
  2. In a large skillet, heat olive oil over medium heat and sauté the onion until soft, about 4-6 minutes.
  3. Add cherry tomatoes and diced paprika, cooking until tomatoes soften, about 5 minutes.
  4. Stir in oregano and salt, then add tomato paste, cooking for a minute.
  5. Pour in heavy cream and reserved pasta water, then simmer until thickened, adjusting seasonings as needed.
  6. Toss drained pasta into the skillet, coating it well with the sauce, adding more pasta water if necessary.
  7. Serve topped with freshly grated Parmesan and basil leaves.

Notes

Reserve pasta water for adjusting sauce consistency and ensure pasta is al dente for best texture.
