- 4 large potatoes, peeled and chopped
- 2 tablespoons butter
- ½ cup milk
- 1 cup shredded cheese (cheddar or your favorite)
- Salt and pepper, to taste
- 1 egg, beaten (for egg wash)
- 1 prepared pie crust (store-bought or homemade)
- Fresh herbs (like chives or parsley) for added flavor, optional
Instructions
- Begin by peeling and chopping the 4 large potatoes into even pieces.
- Place the chopped potatoes in a pot filled with water. Bring to a boil and cook until fork-tender, about 15-20 minutes.
- Drain potatoes and return to the pot. Add 2 tablespoons butter, ½ cup milk, and season with salt and pepper. Mash until smooth.
- Stir in 1 cup of shredded cheese until melted and well incorporated.
- Preheat the oven to 375°F (190°C).
- Roll out your prepared pie crust into your pie dish. Pour the creamy potato filling into the crust.
- If using, sprinkle fresh herbs over the filling before adding the top crust.
- Roll out a second pie crust, place it over the pie, and trim the excess, crimping the edges to seal. Cut slits in the top crust for steam to escape.
- Brush the top with the beaten egg.
- Bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
- Allow to cool for a few minutes before slicing.
