  • 1 lb thinly sliced ribeye or sirloin beef
  • 8 oz provolone cheese, sliced
  • 1 cup mixed bell peppers, chopped
  • 1 medium sweet onion, chopped
  • 2 tbsp extra virgin olive oil
  • 4 low-carb tortillas
  • Salt and black pepper, to taste
  • 12 cloves of crushed garlic (optional)
  • 1 tbsp butter (optional)
  • Beef broth (optional)

Instructions

  1. Gather and prep all ingredients: slice the beef, chop bell peppers and onions.
  2. Heat olive oil in a large skillet over medium heat. Add onions and bell peppers; sauté for 5-7 minutes until tender and translucent.
  3. Increase heat to medium-high, add sliced beef, and season with salt and pepper. Brown for 3-5 minutes until fully cooked.
  4. Reduce heat to low, layer provolone over beef mixture, and allow it to melt.
  5. Spoon mixture onto low-carb tortillas and roll them up tightly.
  6. Place rolled tortillas seam-side down in the skillet and cook for 3-4 minutes, turning occasionally until golden brown. Enjoy!
