- 2 cups chow mein noodles
- 1 cup chocolate chips (for the center)

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla.
- Gradually mix in the dry ingredients until combined.
- Fold in the chow mein noodles until evenly coated with the chocolate batter.
- Drop spoonfuls of the mixture onto the prepared baking sheet, making small indentations in the center of each cookie.
- Bake for 10-12 minutes, then let cool on the baking sheet for a few minutes before transferring to a wire rack.
- While cooling, melt the chocolate chips in a microwave-safe bowl and fill the indentations in each cookie.
- Top with pastel candy eggs and allow the chocolate to set before serving.
Notes
For storage, keep cookies in an airtight container at room temperature for up to a week or freeze for longer keeping.
