  • 4 chicken thighs (bone-in, skin-on preferred)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth (homemade or low-sodium)
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh herbs like thyme or parsley for garnish

Instructions

  1. Heat a large skillet over medium heat and add olive oil.
  2. Season chicken thighs with salt and pepper, and place them skin-side down in the pan. Sear for 6-7 minutes until skin is crispy and golden brown, then flip and cook for another 5 minutes. Remove chicken and set aside.
  3. In the same skillet, add chopped onion and sauté until translucent (3-4 minutes). Add minced garlic and cook for another minute.
  4. Sprinkle flour over the mixture and stir well to create a roux. Cook until it loses its raw taste.
  5. Gradually pour in chicken broth while whisking to avoid lumps, and bring to a gentle simmer.
  6. Add heavy cream, stir until combined, then return chicken to the skillet, ensuring it’s well coated.
  7. Cover and cook on low heat for 15-20 minutes until chicken is cooked through (165°F).
  8. Let rest for a few minutes before serving, garnished with fresh herbs.

Notes

For variations, you can swap heavy cream for half-and-half, add mushrooms, or use a cornstarch slurry to thicken the gravy.
