  • 8 ounces pasta (your choice)
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 1 teaspoon garlic powder
  • Fresh basil leaves for garnish

Instructions

Step 1: Preheat your oven to 400°F (200°C). Spread the broccoli florets out in a single layer on a baking sheet. Drizzle with 1 tablespoon of olive oil, and sprinkle with salt and pepper. Toss the broccoli to coat evenly and roast for 20-25 minutes, or until tender and slightly crispy at the edges.

Step 2: While the broccoli is roasting, cook your pasta according to the package instructions. Drain the pasta, reserving 1/4 cup of pasta water.

Step 3: In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the cooked pasta, followed by the ricotta cheese, Parmesan cheese, lemon zest, and garlic powder. Toss everything together, adding a bit of the reserved pasta water to create a creamy sauce that coats the pasta evenly.

Step 4: Once the broccoli is done roasting, add it to the skillet with the pasta. Gently toss to combine, letting the broccoli and pasta mix together in the creamy sauce.

Step 5: Transfer the skillet to your serving dish, and garnish with fresh basil leaves for a burst of color and flavor. Serve immediately, and enjoy your delicious, comforting meal!

Notes

Don’t Overcrowd the Skillet: When combining the pasta and sauce in the skillet, ensure there’s enough room for everything to mix evenly. If your skillet is too small, the pasta and sauce may not be able to come together smoothly, which could lead to clumping or uneven distribution of the creamy sauce.
