- 2 large sweet potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can coconut milk
- 1 teaspoon ground cumin
- 1 teaspoon ground ginger
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Peel and dice the sweet potatoes into small cubes.
- Chop the onion and mince the garlic.
- In a large pot, combine the sweet potatoes, chopped onion, and minced garlic. Stir to combine.
- Pour in the vegetable broth and coconut milk, stirring gently to combine.
- Add ground cumin and ginger to the pot.
- Choose your cooking method: Instant Pot (high pressure for 10 minutes), Crock Pot (low for 6 hours or high for 3 hours), or Stovetop (bring to a boil and simmer for 20-25 minutes until sweet potatoes are tender).
- Use an immersion blender to puree the soup until smooth.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro if desired.
