  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Peel and dice the sweet potatoes into small cubes.
  2. Chop the onion and mince the garlic.
  3. In a large pot, combine the sweet potatoes, chopped onion, and minced garlic. Stir to combine.
  4. Pour in the vegetable broth and coconut milk, stirring gently to combine.
  5. Add ground cumin and ginger to the pot.
  6. Choose your cooking method: Instant Pot (high pressure for 10 minutes), Crock Pot (low for 6 hours or high for 3 hours), or Stovetop (bring to a boil and simmer for 20-25 minutes until sweet potatoes are tender).
  7. Use an immersion blender to puree the soup until smooth.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with fresh cilantro if desired.
