A warm and hearty dish combining the vibrant flavors of tacos with the comforting layers of lasagna.
Ingredients

- 9 lasagna noodles
- 1 pound ground beef
- 1 packet taco seasoning
- 2 cups salsa
- 1 can black beans, drained and rinsed
- 1 cup corn, drained
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup sour cream
- 2 green onions, chopped
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions, then drain and set aside.
- In a skillet, brown the ground beef until fully cooked. Add taco seasoning and simmer for a few minutes.
- Spread a thin layer of salsa in the bottom of a 9×13 inch baking dish.
- Layer 3 lasagna noodles over the salsa.
- Spread 1/3 of the beef mixture over the noodles, then add black beans, corn, and 1/3 of the cheese.
- Repeat the layering, ending with a final layer of noodles and the remaining beef mixture, black beans, and corn.
- Top the final layer with salsa and remaining cheese.
- Cover with foil and bake for 30 minutes; remove foil and bake an additional 10-15 minutes.
- Cool for a few minutes before serving with sour cream, green onions, and cilantro.
Notes
This recipe can be prepared in advance and stored for busy weeknights. It also allows for variations such as meat alternatives or additional vegetables.
