Ingredients

  • 1 tablespoon red curry paste
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons fish sauce
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup chopped cilantro (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, red curry paste, garlic, ginger, fish sauce, breadcrumbs, egg, and cilantro. Season with salt and pepper, mixing gently.
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on the baking sheet.
  4. Bake for 20-25 minutes until browned and cooked through, reaching an internal temperature of 165°F (74°C).
  5. Garnish with cilantro or lime, and enjoy warm as an appetizer or main dish.
