A comforting casserole combining the rich flavors of French onion soup with tender chicken, fluffy rice, and gooey cheese.

- 2 cups cooked chicken, shredded
- 1 cup rice, uncooked
- 1 can French onion soup
- 1 can cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1 cup water
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 onion, sliced
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, pour the olive oil and add the sliced onion. Sauté until golden brown, about 5-7 minutes.
- In a large mixing bowl, combine the cooked chicken, uncooked rice, French onion soup, cream of mushroom soup, water, and sautéed onions. Stir until well mixed.
- Transfer the mixture into a greased casserole dish and spread evenly.
- Cover the casserole with aluminum foil and bake for about 45 minutes.
- After 45 minutes, remove the foil and sprinkle the shredded cheddar cheese on top. Bake for an additional 15 minutes until the cheese is melted and slightly browned.
- Allow the casserole to rest for a few minutes before serving.
Notes
You can use leftover rotisserie chicken for ease. Feel free to add vegetables or swap cheeses for customization.
