- 1/2 cup butter (salted or unsalted, melted and cooled down)
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar
- 2 eggs (at room temperature)
- 2 tbsp lemon zest
- 1 tbsp lemon juice
- 2 tsp vanilla extract
- 1 tsp lemon extract
- 1 cup all-purpose flour (sifted)
- 1/4 tsp salt
- 1 cup powdered sugar (without corn starch)
- 2 tbsp lemon juice (for glaze)
- 1 tbsp lemon zest (optional, for glaze)
Instructions
- Preheat the oven to 350°F. Line an 8×8 baking pan with parchment paper.
- In a medium to large bowl, whisk together the melted butter, granulated sugar, and powdered sugar until smooth and fluffy.
- Add in the eggs, lemon zest, lemon juice, vanilla extract, and lemon extract, mixing gently until combined.
- Fold in the sifted all-purpose flour and salt until no dry flour remains visible.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 16-17 minutes, or until they spring back slightly when touched.
- Let the blondies cool completely before topping with the glaze.
- For the glaze, whisk together 1 cup of powdered sugar, 2 tablespoons of lemon juice, and 1 tablespoon of lemon zest until smooth. Drizzle over the cooled blondies and let it set before cutting into squares.
Notes
Adjust the glaze consistency with more lemon juice for a drizzle or more powdered sugar to thicken it.
