Description

Ingredients

  • 1/2 cup butter (salted or unsalted, melted and cooled down)
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 2 eggs (at room temperature)
  • 2 tbsp lemon zest
  • 1 tbsp lemon juice
  • 2 tsp vanilla extract
  • 1 tsp lemon extract
  • 1 cup all-purpose flour (sifted)
  • 1/4 tsp salt
  • 1 cup powdered sugar (without corn starch)
  • 2 tbsp lemon juice (for glaze)
  • 1 tbsp lemon zest (optional, for glaze)

Instructions

  1. Preheat the oven to 350°F. Line an 8×8 baking pan with parchment paper.
  2. In a medium to large bowl, whisk together the melted butter, granulated sugar, and powdered sugar until smooth and fluffy.
  3. Add in the eggs, lemon zest, lemon juice, vanilla extract, and lemon extract, mixing gently until combined.
  4. Fold in the sifted all-purpose flour and salt until no dry flour remains visible.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 16-17 minutes, or until they spring back slightly when touched.
  7. Let the blondies cool completely before topping with the glaze.
  8. For the glaze, whisk together 1 cup of powdered sugar, 2 tablespoons of lemon juice, and 1 tablespoon of lemon zest until smooth. Drizzle over the cooled blondies and let it set before cutting into squares.

Notes

Adjust the glaze consistency with more lemon juice for a drizzle or more powdered sugar to thicken it.
