- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced

- For the Creamy Parmesan Pasta:
- 12 oz fettuccine or your favorite pasta
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/2 cup chicken broth
- Salt and pepper to taste
- Extra garlic butter (optional, for drizzling)
Instructions
Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine (or your preferred pasta) and cook according to the package instructions until al dente. Before draining, reserve ½ cup of pasta water this will help loosen the sauce later if needed. Drain and set aside.
Sear the Chicken Bites: While the pasta is cooking, season the chicken bites with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook for 4-5 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Make the Garlic Butter: In the same skillet, melt 4 tablespoons of butter over medium heat. Add the minced garlic and sauté for 30 seconds, stirring frequently. Be careful garlic burns quickly!
Prepare the Creamy Parmesan Sauce: Reduce the heat to low and add 2 tablespoons of butter along with the chicken broth and heavy cream. Stir well to combine. Let the mixture simmer for 2-3 minutes, then gradually stir in the grated Parmesan cheese, allowing it to melt into a smooth, creamy sauce. Season with salt and pepper to taste.
Combine Everything: Add the cooked pasta to the sauce, tossing to coat each strand in that creamy goodness. If the sauce is too thick, add a bit of the reserved pasta water to loosen it up. Return the chicken bites to the skillet and toss everything together until evenly coated.
Serve & Enjoy: Remove from heat and garnish with fresh chopped parsley. For extra flavor, drizzle with additional garlic butter if desired. Serve immediately and enjoy this rich, comforting dish!
