- 4 boneless, skinless chicken breasts (or thighs), cut into bite-sized pieces
- 3 tablespoons unsalted butter, divided
- 2 tablespoons olive oil
- 6 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika (optional)
- Salt and freshly ground black pepper, to taste
- 1/4 cup low-sodium chicken broth
- 2 tablespoons fresh parsley, chopped (plus extra for garnish)
- 12 oz egg noodles (or your favorite pasta)
- 3 tablespoons unsalted butter
- Salt and pepper, to taste
- 2 tablespoons grated Parmesan cheese (optional)
- Fresh parsley, for garnish
Instructions
- Season the chicken by tossing it with Italian seasoning, smoked paprika, salt, and pepper.
- In a skillet, heat 2 tablespoons of butter with the olive oil over medium-high heat, then add the seasoned chicken and cook for 4-5 minutes per side until golden brown. Remove and set aside.
- Add the remaining tablespoon of butter to the skillet, melt it, and then sauté the minced garlic for about 30 seconds.
- Pour in the chicken broth, scraping the pan to release brown bits and let it simmer for 2-3 minutes.
- Return the chicken to the skillet and toss in the garlic butter sauce, sprinkling with fresh parsley.
- Cook the noodles in a pot of salted boiling water according to package instructions until al dente, then drain.
- Add butter to the hot noodles, toss to coat, and season with salt, pepper, and Parmesan cheese.
- Serve the garlic butter chicken over the buttered noodles and garnish with parsley.
Notes
Ensure the chicken doesn’t overcook to prevent dryness. Serve with a side salad or garlic bread for a complete meal.
