Ingredients

  • 4 boneless, skinless chicken breasts (or thighs), cut into bite-sized pieces
  • 3 tablespoons unsalted butter, divided
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup low-sodium chicken broth
  • 2 tablespoons fresh parsley, chopped (plus extra for garnish)
  • 12 oz egg noodles (or your favorite pasta)
  • 3 tablespoons unsalted butter
  • Salt and pepper, to taste
  • 2 tablespoons grated Parmesan cheese (optional)
  • Fresh parsley, for garnish

Instructions

  1. Season the chicken by tossing it with Italian seasoning, smoked paprika, salt, and pepper.
  2. In a skillet, heat 2 tablespoons of butter with the olive oil over medium-high heat, then add the seasoned chicken and cook for 4-5 minutes per side until golden brown. Remove and set aside.
  3. Add the remaining tablespoon of butter to the skillet, melt it, and then sauté the minced garlic for about 30 seconds.
  4. Pour in the chicken broth, scraping the pan to release brown bits and let it simmer for 2-3 minutes.
  5. Return the chicken to the skillet and toss in the garlic butter sauce, sprinkling with fresh parsley.
  6. Cook the noodles in a pot of salted boiling water according to package instructions until al dente, then drain.
  7. Add butter to the hot noodles, toss to coat, and season with salt, pepper, and Parmesan cheese.
  8. Serve the garlic butter chicken over the buttered noodles and garnish with parsley.

Notes

Ensure the chicken doesn’t overcook to prevent dryness. Serve with a side salad or garlic bread for a complete meal.
