Instructions
Step 1: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with oil. Starting with a hot, ready oven helps the sweet potatoes crisp up nicely.
Step 2: Place the sweet potato rounds into a large mixing bowl. Pour in the melted butter, olive oil, garlic, smoked paprika, thyme, salt, and pepper. Toss well with your hands or a spatula, making sure each slice is glistening with that buttery seasoning mix.
Step 3: Arrange the rounds in a single layer on the baking sheet. Try not to crowd them space is key if you want those beautiful golden edges instead of steaming.
Step 4: Slide the tray into the oven and roast for 25–30 minutes, flipping halfway through. You’ll know they’re ready when the edges turn golden-brown and the centers are tender enough to pierce with a fork.
Step 5: Remove from oven, sprinkle with fresh parsley, and serve warm.
