Ingredients
Ingredients You’ll Need:
- For the Steak Bites:
- 1.5 lbs sirloin steak, cut into 1-inch cubes
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 4 tbsp butter
- 1 tbsp fresh thyme leaves
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- For the Shell Pasta:
- 8 oz shell pasta
- 2 tbsp olive oil
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tbsp butter
- 2 cloves garlic, minced
- 1/4 tsp salt
- 1/8 tsp black pepper
- 2 tbsp chopped fresh parsley, for garnish
Instructions
Step 1: Start by cooking the shell pasta according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water for later.
Step 2: While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the cubed sirloin steak. Season with salt, black pepper, and smoked paprika. Sear the steak for about 3-4 minutes per side until browned and cooked to your desired level of doneness. Remove the steak from the skillet and set it aside.
Step 3: In the same skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn the garlic.
Step 4: Pour in the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese, allowing it to melt into the sauce. Add the reserved pasta water to help thin the sauce to your desired consistency.
Step 5: Return the cooked steak bites to the skillet and stir to combine with the sauce. Add the cooked shell pasta to the skillet and toss everything together until the pasta is well coated in the creamy Parmesan sauce. Garnish with fresh parsley before serving.
