Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sauté until fragrant and golden brown.
- Toss in the diced chicken breast and cook until no longer pink inside.
- Add the diced potatoes, carrots, and corn, mixing to combine.
- Pour in the chicken broth, bring to a gentle boil, then reduce heat and simmer for 15-20 minutes.
- Stir in the heavy cream and grated Parmesan cheese until melted.
- Season with salt and pepper to taste and serve hot, garnished with fresh parsley.
