Description

A cozy, hands-off dinner made in a crockpot with tender chicken breasts and baby potatoes in a garlic-parmesan broth.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Wash the baby potatoes and halve them.
  2. Mince the garlic cloves and set aside.
  3. Rub the chicken breasts with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes until coated.
  4. Layer the halved potatoes in the bottom of the crockpot and place the seasoned chicken on top.
  5. Pour chicken broth over the chicken and potatoes, ensuring they’re well coated.
  6. Sprinkle the minced garlic evenly over the chicken and add the grated parmesan cheese on top.
  7. Cover the crockpot and cook on low for 6–7 hours or high for 3–4 hours.
  8. Once cooked, check that chicken reaches an internal temperature of 165°F (75°C) and potatoes are fork-tender.
  9. Gently remove the chicken and potatoes from the crockpot, spoon any remaining sauce over the top, and garnish with parsley before serving.

Notes

For a crispy finish, broil the chicken for 2–3 minutes after cooking. You can add vegetables like carrots or mushrooms for extra flavor.
