Description

A comforting chicken noodle soup infused with aromatic ginger and garlic, perfect for chilly evenings and busy weeknights.


Ingredients

  • 2 lb boneless skinless chicken thighs
  • 6 garlic cloves, thinly sliced
  • 1 piece ginger (3 inches), peeled and finely chopped
  • 1 bundle scallions (6 to 8 oz), thinly sliced, divided into whites and greens
  • 4 tsp kosher salt
  • Freshly ground black or white pepper, to taste
  • 10 cups water
  • 8 oz dried ramen noodles or dried curly noodles
  • 1 cup carrot, cut into thin matchsticks
  • 1/4 cup black rice vinegar
  • 1/4 cup soy sauce
  • 2 tbsp toasted sesame oil
  • Crispy chili oil, to taste

Instructions

  1. In a large pot or Dutch oven, bring 10 cups of water to a boil over medium-high heat.
  2. Carefully add the chicken thighs to the pot. Lower the heat to a gentle simmer and cook for about 15-20 minutes until the chicken is fully cooked and tender.
  3. Once the chicken is done, take it out of the pot. Let it cool slightly before shredding into bite-sized pieces.
  4. In the same pot, add the sliced garlic and chopped ginger. Sauté for about a minute until fragrant.
  5. Mix in the scallion whites, matchstick carrots, and salt. Sauté for about 3-4 minutes until the vegetables soften slightly.
  6. Add the shredded chicken back into the pot. Toss in the noodles and let everything simmer together for another 5-7 minutes until the noodles are cooked.
  7. Stir in the black rice vinegar, soy sauce, and toasted sesame oil. Adjust seasoning with freshly ground pepper to taste.
  8. Serve each bowl hot, garnishing with the scallion greens and a drizzle of crispy chili oil for an extra kick.

Notes

For a gluten-free option, swap soy sauce with tamari and choose gluten-free noodles.
