Description
A comforting chicken noodle soup infused with aromatic ginger and garlic, perfect for chilly evenings and busy weeknights.
Ingredients
Scale
- 2 lb boneless skinless chicken thighs
- 6 garlic cloves, thinly sliced
- 1 piece ginger (3 inches), peeled and finely chopped
- 1 bundle scallions (6 to 8 oz), thinly sliced, divided into whites and greens
- 4 tsp kosher salt
- Freshly ground black or white pepper, to taste
- 10 cups water
- 8 oz dried ramen noodles or dried curly noodles
- 1 cup carrot, cut into thin matchsticks
- 1/4 cup black rice vinegar
- 1/4 cup soy sauce
- 2 tbsp toasted sesame oil
- Crispy chili oil, to taste
Instructions
- In a large pot or Dutch oven, bring 10 cups of water to a boil over medium-high heat.
- Carefully add the chicken thighs to the pot. Lower the heat to a gentle simmer and cook for about 15-20 minutes until the chicken is fully cooked and tender.
- Once the chicken is done, take it out of the pot. Let it cool slightly before shredding into bite-sized pieces.
- In the same pot, add the sliced garlic and chopped ginger. Sauté for about a minute until fragrant.
- Mix in the scallion whites, matchstick carrots, and salt. Sauté for about 3-4 minutes until the vegetables soften slightly.
- Add the shredded chicken back into the pot. Toss in the noodles and let everything simmer together for another 5-7 minutes until the noodles are cooked.
- Stir in the black rice vinegar, soy sauce, and toasted sesame oil. Adjust seasoning with freshly ground pepper to taste.
- Serve each bowl hot, garnishing with the scallion greens and a drizzle of crispy chili oil for an extra kick.
