Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking soda, spices, salt, and cocoa powder until well combined.
- In another mixing bowl, beat together the granulated sugar, brown sugar, molasses, egg, and vanilla extract until smooth and glossy.
- Gradually mix the dry ingredients into the wet ingredients, combining gently.
- Chill the dough in the refrigerator for about 30 minutes.
- Scoop out tablespoon-sized portions of dough, roll into balls, and coat in powdered sugar.
- Place the dough balls on the baking sheet, spaced apart.
- Bake for 10-12 minutes until edges are set and tops are crinkled.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack.
