- 1 lb ground turkey
- 2 medium zucchinis, sliced
- 1 cup shredded mozzarella cheese
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes, drained
- 1 tsp dried Italian herbs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil.
- Heat a large skillet over medium heat and add the olive oil. Sauté the chopped onion and minced garlic until the onion is translucent.
- Add the ground turkey to the skillet, breaking it apart, and cook until no longer pink.
- Stir in the diced tomatoes, dried Italian herbs, salt, and black pepper, and let simmer for a few minutes.
- Arrange half of the zucchini slices in the baking dish, add half of the turkey mixture, and sprinkle with half of the mozzarella.
- Repeat the layers with the remaining zucchini, turkey mixture, and mozzarella.
- Bake for 30 to 35 minutes until the cheese is bubbly and golden.
- Let the casserole rest for 5 minutes before serving.
Notes
Feel free to swap in Italian sausage or use fresh mozzarella for better texture. You can also make it vegetarian with tempeh or lentils.
