- 4 boneless, skinless chicken thighs
- 1 cup pineapple chunks (fresh or canned)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 red onion, sliced
- 2 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: green onions and sesame seeds for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine the soy sauce, honey, olive oil, and minced garlic. Stir until well blended.
- Place the chicken thighs in the center of a large sheet pan and pour the marinade generously over them, ensuring each piece is well coated.
- Scatter the sliced red and green bell peppers and red onion around the chicken on the sheet pan, adding pineapple chunks among the vegetables.
- Season with salt and pepper.
- Bake in the preheated oven for 25-30 minutes, until the chicken is golden brown and the internal temperature reaches 165°F.
- Remove from oven and garnish with chopped green onions and sesame seeds if desired.
Notes
For enhanced flavor, marinate the chicken for 30 minutes to an hour before cooking. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
