- 2 cups rolled oats
- 2 cups almond milk (or other plant-based milk)
- 1 cup fresh or frozen blueberries
- 1/4 cup maple syrup (or another sweetener)
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, blend together the rolled oats, almond milk, maple syrup, and vanilla extract until well mixed.
- Sprinkle in the baking powder, cinnamon, and salt, and stir until everything is well incorporated.
- Gently fold in the blueberries, being careful not to crush them.
- Pour the mixture into a greased 8×8 inch baking dish, spreading it evenly.
- Bake in the preheated oven for 30-35 minutes until the top is set and lightly golden.
- Allow the oatmeal to cool slightly before cutting it into squares.
