Ingredients

  • 2 cups almond milk (or other plant-based milk)
  • 1 cup fresh or frozen blueberries
  • 1/4 cup maple syrup (or another sweetener)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, blend together the rolled oats, almond milk, maple syrup, and vanilla extract until well mixed.
  3. Sprinkle in the baking powder, cinnamon, and salt, and stir until everything is well incorporated.
  4. Gently fold in the blueberries, being careful not to crush them.
  5. Pour the mixture into a greased 8×8 inch baking dish, spreading it evenly.
