- 2 sweet potatoes, diced
- 1 cup brown rice
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Toss diced sweet potatoes with olive oil, salt, pepper, garlic powder, and paprika. Spread on a baking sheet and roast for 25-30 minutes until tender.
- Meanwhile, cook brown rice according to package instructions.
- While the rice and sweet potatoes are cooking, grill or pan-sear the chicken breast until fully cooked, about 6-7 minutes per side.
- Let the chicken rest for a few minutes, then slice it into even pieces.
- In bowls, layer the rice, roasted sweet potatoes, and sliced chicken. Garnish with fresh parsley and serve immediately.
Notes
