- 3 ripe bananas, mashed
- 1/3 cup unsweetened applesauce
- 2 cups oats
- 1/4 cup almond milk
- 1/4 cup raisins or nuts
- 1 cup dark chocolate chunks (e.g., Lily’s brand)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
Instructions
- Preheat the oven to 350°F (177°C).
- In a large mixing bowl, combine the mashed bananas and unsweetened applesauce, stirring until well mixed.
- Mix in the vanilla extract and ground cinnamon.
- Add the oats to the banana mixture and stir until combined.
- Pour in the almond milk to moisten the oats.
- Gently incorporate raisins or nuts and dark chocolate chunks.
- Line a baking sheet with parchment paper.
- Spoon out portions of the mixture onto the baking sheet, flattening slightly.
- Bake for 15-20 minutes, until firm and lightly golden.
- Let cool on the baking sheet, then transfer to a wire rack.
Notes
Store leftovers in an airtight container for up to a week. These cookies can also be frozen for up to three months.
