Ingredients

  • 1/3 cup unsweetened applesauce
  • 2 cups oats
  • 1/4 cup almond milk
  • 1/4 cup raisins or nuts
  • 1 cup dark chocolate chunks (e.g., Lily’s brand)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. In a large mixing bowl, combine the mashed bananas and unsweetened applesauce, stirring until well mixed.
  3. Mix in the vanilla extract and ground cinnamon.
  4. Add the oats to the banana mixture and stir until combined.
  5. Pour in the almond milk to moisten the oats.
  6. Gently incorporate raisins or nuts and dark chocolate chunks.
  7. Line a baking sheet with parchment paper.
  8. Spoon out portions of the mixture onto the baking sheet, flattening slightly.
  9. Bake for 15-20 minutes, until firm and lightly golden.
  10. Let cool on the baking sheet, then transfer to a wire rack.

Notes

Store leftovers in an airtight container for up to a week. These cookies can also be frozen for up to three months.
