Ingredients

- 1 cup almond flour
- 2 tablespoons coconut oil, melted
- 2 tablespoons honey or maple syrup
- 1 cup Greek yogurt
- 1 cup raspberry puree
- 1 teaspoon vanilla extract
- 3 tablespoons protein powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Prepare an 8×8 inch baking dish by lining it with parchment paper.
- In a large mixing bowl, combine almond flour, melted coconut oil, and honey until well combined.
- Press the crust mixture firmly into the bottom of the prepared baking dish.
- In another bowl, whisk together Greek yogurt, raspberry puree, vanilla extract, protein powder, baking powder, and salt until smooth.
- Pour the cheesecake mixture over the prepared crust and smooth the top with a rubber spatula.
- Bake for 25-30 minutes until edges are set and center has a slight jiggle.
- Remove from oven and cool completely in the dish, then lift out and slice into squares.
- Serve chilled for best flavor.
Notes
Chill bars for a few hours after baking to enhance flavor. Store leftovers in an airtight container in the fridge for up to a week.
