Ingredients

- 2 cups cooked chicken, shredded
- 1 can white beans, rinsed and drained
- 1 can corn, drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup light cream or Greek yogurt
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Olive oil for cooking
- Chopped cilantro for garnish (optional)
Instructions
- Heat a drizzle of olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and sauté until translucent and fragrant, about 3-4 minutes.
- Stir in the shredded chicken, white beans, corn, cumin, chili powder, salt, and pepper, mixing for about 2 minutes.
- Pour in the chicken broth and bring to a gentle boil.
- Reduce the heat and let simmer uncovered for 20-30 minutes, stirring occasionally.
- Stir in the light cream or Greek yogurt before serving.
- Serve hot, garnished with chopped cilantro if desired.
Notes
For a thicker texture, mash a cup of the beans against the pot’s side and stir back in. Can be served with tortillas or crusty bread.
