Description

A creamy yet light chicken chili that’s high in protein and perfect for weeknight comfort or post-workout recovery.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can white beans, rinsed and drained
  • 1 can corn, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup light cream or Greek yogurt
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Olive oil for cooking
  • Chopped cilantro for garnish (optional)

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until translucent and fragrant, about 3-4 minutes.
  3. Stir in the shredded chicken, white beans, corn, cumin, chili powder, salt, and pepper, mixing for about 2 minutes.
  4. Pour in the chicken broth and bring to a gentle boil.
  5. Reduce the heat and let simmer uncovered for 20-30 minutes, stirring occasionally.
  6. Stir in the light cream or Greek yogurt before serving.
  7. Serve hot, garnished with chopped cilantro if desired.

Notes

For a thicker texture, mash a cup of the beans against the pot’s side and stir back in. Can be served with tortillas or crusty bread.
