Instructions
- Peel and shred the sweet potatoes using a box grater or food processor.
- Place the shredded sweet potatoes in a clean kitchen towel and squeeze to remove excess moisture.
- Finely chop the onion and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add the chopped onion and sauté for 2-3 minutes until translucent.
- Add the shredded sweet potatoes, season with salt and pepper, and compact them in the pan.
- Cook for 5-7 minutes until golden brown, then flip and cook the other side for another 5-7 minutes.
- Serve hot with optional toppings like avocado or eggs.
