Ingredients

  • 1 small onion
  • 2 tablespoons olive oil

Instructions

  1. Peel and shred the sweet potatoes using a box grater or food processor.
  2. Place the shredded sweet potatoes in a clean kitchen towel and squeeze to remove excess moisture.
  3. Finely chop the onion and set aside.
  4. In a large skillet, heat olive oil over medium heat.
  5. Add the chopped onion and sauté for 2-3 minutes until translucent.
  6. Add the shredded sweet potatoes, season with salt and pepper, and compact them in the pan.
  7. Cook for 5-7 minutes until golden brown, then flip and cook the other side for another 5-7 minutes.
  8. Serve hot with optional toppings like avocado or eggs.
