Description

Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 1 can (15 oz) diced tomatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: garlic, bell peppers, or other vegetables

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onion (and garlic or bell peppers if using) and sauté until softened.
  3. Add ground beef to the skillet and cook until browned. Drain excess fat.
  4. In a large baking dish, combine the cooked beef mixture with diced potatoes and diced tomatoes. Season with salt and pepper. Stir until well mixed.
  5. Cover the dish with foil and bake for 45 minutes.
  6. Remove from the oven, sprinkle cheese on top, and return to the oven uncovered for an additional 15 minutes or until cheese is melted and bubbly.
  7. Let the casserole rest for five minutes before serving.

Notes

For a vegetarian option, substitute ground beef with a plant-based alternative or cooked lentils. You can also add other vegetables for extra nutrients.
