- 1 lb boneless, skinless chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 cup mixed vegetables (optional)
- Chopped green onions for garnish
Instructions
- Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat a large skillet over medium heat and add a little oil. Sear the chicken for 3-4 minutes on each side until golden brown.
- In a mixing bowl, whisk together the BBQ sauce and honey until fully combined.
- Toast the uncooked rice in the skillet for 1-2 minutes, stirring continuously.
- Pour in the chicken broth and half of the BBQ sauce mixture, stirring well to coat the rice.
- Return the seared chicken to the pan and pour the remaining sauce over the top.
- Cover the skillet and simmer on low heat for 15 minutes.
- Stir in mixed vegetables, cover again, and cook for an additional 5 minutes or until the rice is tender and chicken is cooked through.
- Let it rest for 5 minutes before serving. Garnish with chopped green onions.
Notes
For extra flavor, marinate the chicken ahead of time and allow for proper searing for the best taste.
