Description

A comforting dish that combines tender chicken thighs with sweet honey and savory BBQ sauce served over fluffy rice.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish

Instructions

  1. Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a large skillet over medium heat and add a little oil. Sear the chicken for 3-4 minutes on each side until golden brown.
  3. In a mixing bowl, whisk together the BBQ sauce and honey until fully combined.
  4. Toast the uncooked rice in the skillet for 1-2 minutes, stirring continuously.
  5. Pour in the chicken broth and half of the BBQ sauce mixture, stirring well to coat the rice.
  6. Return the seared chicken to the pan and pour the remaining sauce over the top.
  7. Cover the skillet and simmer on low heat for 15 minutes.
  8. Stir in mixed vegetables, cover again, and cook for an additional 5 minutes or until the rice is tender and chicken is cooked through.
  9. Let it rest for 5 minutes before serving. Garnish with chopped green onions.

Notes

For extra flavor, marinate the chicken ahead of time and allow for proper searing for the best taste.
