- 2 large sweet potatoes
- 1 cup feta cheese, crumbled
- 2 tablespoons honey
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (such as thyme or parsley) for garnish

Instructions
- Preheat your oven to 400°F (200°C).
- Slice the sweet potatoes into 1/4 inch thick rounds.
- In a large mixing bowl, toss the sweet potato rounds with olive oil, salt, and pepper.
- Arrange the sweet potato rounds on a baking sheet in a single layer.
- Bake in the preheated oven for 20-25 minutes, flipping halfway through.
- Once out of the oven, drizzle honey over the rounds.
- Sprinkle with crumbled feta cheese and garnish with fresh herbs.
- Serve warm and enjoy!
Notes
For added flavor, infuse olive oil with herbs before tossing the sweet potatoes.
