  • 1 pound fresh green beans
  • 3 tablespoons olive oil
  • 3 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • Optional garnishes: Chopped fresh parsley or toasted sesame seeds

Instructions

  1. Preheat the oven to 400°F (200°C). Line a rimmed baking sheet with foil or parchment for easier cleanup.
  2. Wash and trim the green beans, snapping off the stem ends. Peel the carrots and cut them into 1-inch thick pieces.
  3. In a small bowl, whisk together olive oil, honey, balsamic vinegar, minced garlic, dried thyme, salt, and pepper.
  4. Place the carrots and green beans in a large bowl and pour the honey glaze over them. Toss gently to coat.
  5. Spread the vegetables in a single layer on the baking sheet and roast in the oven for 20-25 minutes.
  6. For extra caramelization, broil for 1-2 minutes at the end, watching closely to avoid burning.
  7. Let rest for a minute, then garnish and serve warm.

Notes

For crisper edges, use a metal sheet pan. You can also customize the glaze with spices or citrus for a personal touch.
