  • 1 cup peaches, finely diced (fresh or canned)
  • 1/2 cup milk
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 3 cups powdered sugar, sifted
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons peach puree (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the sifted flour, baking powder, and salt.
  3. In a large bowl, cream the softened butter, sugar, and honey using an electric mixer until the mixture is light and fluffy, about 3-4 minutes.
  4. Beat in the eggs, one at a time, mixing well after each addition, then mix in the vanilla extract.
  5. Alternately add the dry ingredients and the milk to the butter mixture, starting and ending with the dry ingredients, mixing gently until just blended.
  6. Fold in the finely diced peaches.
  7. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  8. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cupcakes cool completely in the tin before removing them.
  10. For the frosting, beat the softened cream cheese and butter until smooth and creamy, then gradually mix in honey and vanilla before adding the powdered sugar. Beat until fluffy.
  11. If desired, mix in peach puree to the frosting.
  12. Frost the cooled cupcakes generously and garnish with peach slices or a drizzle of honey.
