- 1 cup peaches, finely diced (fresh or canned)
- 1/2 cup milk
- 8 oz cream cheese, softened
- 1/4 cup butter, softened
- 3 cups powdered sugar, sifted
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 2 tablespoons peach puree (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
- In a medium bowl, whisk together the sifted flour, baking powder, and salt.
- In a large bowl, cream the softened butter, sugar, and honey using an electric mixer until the mixture is light and fluffy, about 3-4 minutes.
- Beat in the eggs, one at a time, mixing well after each addition, then mix in the vanilla extract.
- Alternately add the dry ingredients and the milk to the butter mixture, starting and ending with the dry ingredients, mixing gently until just blended.
- Fold in the finely diced peaches.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cupcakes cool completely in the tin before removing them.
- For the frosting, beat the softened cream cheese and butter until smooth and creamy, then gradually mix in honey and vanilla before adding the powdered sugar. Beat until fluffy.
- If desired, mix in peach puree to the frosting.
- Frost the cooled cupcakes generously and garnish with peach slices or a drizzle of honey.

Use room temperature ingredients for better texture, and avoid overmixing to prevent dense cupcakes.
