Description

Ingredients

  • 1/2 cup boiling water
  • 1 cup mini marshmallows
  • 1/2 cup unsalted butter (for frosting)
  • 3 cups powdered sugar (for frosting)
  • 2 tablespoons milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt; whisk until well blended.
  3. Add the milk, vegetable oil, eggs, and vanilla extract to the dry ingredients, then mix until smooth.
  4. Stir in the boiling water until combined; the batter will be thin.
  5. Pour the batter into the cupcake liners, filling each about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  7. Allow the cupcakes to cool completely on a wire rack.
  8. For frosting, beat the butter until creamy, then add in the powdered sugar, milk, and vanilla, mixing until light and fluffy.
  9. Frost the cooled cupcakes generously with the marshmallow frosting and top with mini marshmallows.
