Ingredients

- 2 cups long-grain white rice
- 1 pound boneless, skinless chicken thighs or breasts
- 4 cups chicken broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup frozen peas and carrots (optional)
Instructions
- Prepare ingredients: Chop onion and mince garlic. Rinse rice under cold water until water runs clear.
- Set Instant Pot to ‘Sauté’ mode, heat olive oil, and sauté onion and garlic for 2-3 minutes until translucent.
- Add chicken to the pot; season with paprika, thyme, salt, and pepper. Sear chicken for about 2 minutes on each side.
- Pour in rinsed rice and chicken broth, mixing well to fully submerge rice.
- Close the lid, set the valve to sealing, and select ‘Manual’ or ‘Pressure Cook’ for 8 minutes.
- Once done, allow natural release for 10 minutes, then vent any remaining steam.
- Fluff rice with a fork, add frozen peas and carrots if using, reclose lid for 2-3 minutes, then serve garnished with parsley or cilantro.
Notes
Consider adding cayenne pepper or fresh herbs for variations. Leftovers can be stored in an airtight container in the fridge for up to four days.
