Description

A comforting Irish Apple Cake filled with juicy apples and topped with a crunchy streusel, perfect for family gatherings.

  • 1/2 cup granulated sugar
  • 2 large eggs
  • 3 Tbsp whole milk or cream
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/8 tsp salt
  • About 3 Granny Smith apples (peeled and thinly sliced, weighing a little over a pound after slicing)
  • Confectioner’s sugar for dusting
  • 3/4 cup all-purpose flour (for streusel topping)
  • 1/4 cup old-fashioned rolled oats (for streusel topping)
  • 6 Tbsp unsalted cold butter (cut into small pieces, for streusel topping)
  • 1/2 cup granulated sugar (for streusel topping)
  • 6 large egg yolks (for custard sauce)
  • 6 Tbsp granulated sugar (for custard sauce)
  • 1 1/2 cups whole milk (you can also use half-and-half or cream, for custard sauce)
  • 1 1/2 tsp vanilla (for custard sauce)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a medium saucepan, heat the milk over low heat until just simmering. In a bowl, whisk together the egg yolks and sugar until pale and thick. Gradually combine the hot milk into the egg mixture while whisking continuously. Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens—about 5 minutes. Strain the sauce to remove any bits and stir in the vanilla. Chill the custard in the refrigerator.
  3. For the streusel topping, combine the cold butter, flour, sugar, and oats in a bowl. Use your fingers or a fork to mix until the mixture resembles coarse crumbs. Refrigerate until ready.
  4. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time.
  5. In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt. Gradually fold the dry ingredients into the butter mixture, alternating with the milk or cream until just combined.
  6. Spread the batter into the springform pan. Layer the sliced apples on top, then sprinkle with the streusel topping.
  7. Bake for 50-60 minutes until golden brown and set in the middle. Allow to cool slightly before dusting with confectioner’s sugar and serving with chilled custard sauce.

Notes

Serve warm with custard sauce, coffee, or tea. For variations, try different fruits or nuts in the topping.
