Deliciously fluffy and buttery Irish Scones, perfect for breakfast or tea time.
Ingredients

- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup milk
- 1 large egg
- 1/2 cup raisins (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- In another bowl, whisk together the milk and egg.
- Pour the milk mixture into the flour mixture and gently stir until just combined.
- If using, fold in the raisins into the dough.
- Turn the dough onto a floured surface and knead gently a few times.
- Pat the dough into a circle about 3/4 inch thick.
- Cut the dough into wedges and place them on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes, or until golden brown.
- Serve warm with butter, jam, and cream.
Notes
For extra flavor, consider adding lemon zest or cheddar cheese to the dough.
