Ingredients

  • 400 g (14 oz) spaghetti
  • 6 cloves garlic, thinly sliced
  • 1/3 cup extra virgin olive oil
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup fresh parsley, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Bring a large pot of salted water to a vigorous boil.
  2. Add the spaghetti and cook until al dente according to package instructions (about 8-10 minutes), stirring occasionally.
  3. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  4. Add the sliced garlic and sauté gently until fragrant and golden (about 2-3 minutes).
  5. Stir in the red pepper flakes and let them bloom for a few seconds.
  6. Reserve 1/2 cup of the pasta cooking water before draining the spaghetti.
  7. Drain the spaghetti and add it directly to the skillet with the garlic oil mixture.
  8. Toss to coat the pasta, adding a splash of the reserved pasta water.
  9. Season with salt and pepper to taste, and stir in the chopped parsley.
  10. Serve immediately, garnished with grated Parmesan cheese if desired.

Notes

For a richer flavor, consider adding a pat of butter at the end, or serve with a squeeze of lemon.
