- 400 g (14 oz) spaghetti
- 6 cloves garlic, thinly sliced
- 1/3 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes
- 1/4 cup fresh parsley, chopped
- Salt, to taste
- Freshly ground black pepper, to taste
- Grated Parmesan cheese, for serving (optional)
Instructions
- Bring a large pot of salted water to a vigorous boil.
- Add the spaghetti and cook until al dente according to package instructions (about 8-10 minutes), stirring occasionally.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- Add the sliced garlic and sauté gently until fragrant and golden (about 2-3 minutes).
- Stir in the red pepper flakes and let them bloom for a few seconds.
- Reserve 1/2 cup of the pasta cooking water before draining the spaghetti.
- Drain the spaghetti and add it directly to the skillet with the garlic oil mixture.
- Toss to coat the pasta, adding a splash of the reserved pasta water.
- Season with salt and pepper to taste, and stir in the chopped parsley.
- Serve immediately, garnished with grated Parmesan cheese if desired.
Notes
For a richer flavor, consider adding a pat of butter at the end, or serve with a squeeze of lemon.
