Ingredients

  • 400 g (14 oz) spaghetti
  • 6 cloves garlic, thinly sliced
  • 1/3 cup extra virgin olive oil
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup fresh parsley, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Bring a large pot of salted water to a vigorous boil.
  2. Add the spaghetti and cook until al dente according to package instructions (about 8-10 minutes).
  3. While the pasta cooks, heat olive oil in a large skillet over medium heat until it shimmers.
  4. Add sliced garlic and sauté gently until fragrant and golden (about 2-3 minutes).
  5. Stir in the red pepper flakes.
  6. Reserve 1/2 cup of the pasta cooking water before draining spaghetti.
  7. Drain spaghetti and add it directly to the skillet with the garlic oil mixture.
  8. Toss to coat the pasta with the oil and garlic, adding reserved pasta water to create a silky sauce.
  9. Season with salt and pepper to taste, and stir in chopped parsley.
  10. Serve immediately, garnished with grated Parmesan cheese if desired.

Notes

For extra richness, stir in a pat of butter at the end. A squeeze of lemon can brightens the dish.
