- 2 Cucumbers
- 8 oz Fresh mozzarella cheese
- 1 cup Cherry tomatoes
- 1/4 cup Fresh basil leaves
- 2 tbsp Olive oil
- 1 tbsp Balsamic vinegar
- Salt to taste
- Pepper to taste
Instructions
- Rinse the cucumbers and tomatoes under cool water. Trim the ends of the cucumbers and slice into half-moons or rounds about a quarter-inch thick.
- Cut the fresh mozzarella into bite-sized pieces, patting gently with a paper towel if very wet.
- In a large bowl, combine cucumbers, tomatoes, mozzarella, and torn basil leaves.
- In a small dish, whisk together olive oil and balsamic vinegar until slightly emulsified. Pour over the salad.
- Season with salt and pepper, tossing gently to combine.
- Serve immediately to maintain the texture of the cucumbers and mozzarella.
Notes
Chill cucumbers briefly for extra crunch. Keep the dressing separate until ready to serve to prevent sogginess.
