Description

A refreshing and light salad that combines juicy cucumbers, creamy fresh mozzarella, and sweet cherry tomatoes, drizzled with olive oil and balsamic vinegar.


Ingredients

  • 2 Cucumbers
  • 8 oz Fresh mozzarella cheese
  • 1 cup Cherry tomatoes
  • 1/4 cup Fresh basil leaves
  • 2 tbsp Olive oil
  • 1 tbsp Balsamic vinegar
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse the cucumbers and tomatoes under cool water. Trim the ends of the cucumbers and slice into half-moons or rounds about a quarter-inch thick.
  2. Cut the fresh mozzarella into bite-sized pieces, patting gently with a paper towel if very wet.
  3. In a large bowl, combine cucumbers, tomatoes, mozzarella, and torn basil leaves.
  4. In a small dish, whisk together olive oil and balsamic vinegar until slightly emulsified. Pour over the salad.
  5. Season with salt and pepper, tossing gently to combine.
  6. Serve immediately to maintain the texture of the cucumbers and mozzarella.

Notes

Chill cucumbers briefly for extra crunch. Keep the dressing separate until ready to serve to prevent sogginess.
