- 3–4 lb beef chuck roast
- 2 large onions, sliced
- 2 cups beef broth
- 1 packet French onion soup mix
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh thyme for garnish (optional)
Instructions
- Preheat your oven to 325°F (163°C) with the rack in the lower third.
- Season the beef chuck roast generously with salt and pepper. Pat the meat dry for better searing.
- In a large oven-safe pot, heat the olive oil over medium-high heat and sear the roast on all sides until browned, about 3-4 minutes per side.
- Remove the roast and set aside. Add sliced onions to the pot and cook until caramelized, about 10 minutes, stirring occasionally.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Add beef broth and French onion soup mix, stirring to combine and scrape up any browned bits.
- Return the seared roast to the pot, ensuring it’s submerged. Cover with a lid and transfer to the oven.
- Roast for 3-4 hours until fork-tender. Let it rest for a few minutes before serving, garnished with fresh thyme if desired.
Notes
Feel free to add mushrooms, use a slow cooker, or make it gluten-free with appropriate substitutes. Leftovers are great for sandwiches or pot pies.
