  • 2 large onions, sliced
  • 2 cups beef broth
  • 1 packet French onion soup mix
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Instructions

  1. Preheat your oven to 325°F (163°C) with the rack in the lower third.
  2. Season the beef chuck roast generously with salt and pepper. Pat the meat dry for better searing.
  3. In a large oven-safe pot, heat the olive oil over medium-high heat and sear the roast on all sides until browned, about 3-4 minutes per side.
  4. Remove the roast and set aside. Add sliced onions to the pot and cook until caramelized, about 10 minutes, stirring occasionally.
  5. Stir in minced garlic and cook for an additional minute until fragrant.
  6. Add beef broth and French onion soup mix, stirring to combine and scrape up any browned bits.
  7. Return the seared roast to the pot, ensuring it’s submerged. Cover with a lid and transfer to the oven.
  8. Roast for 3-4 hours until fork-tender. Let it rest for a few minutes before serving, garnished with fresh thyme if desired.

Notes
