  • 2 large onions, sliced
  • 2 cups beef broth
  • 1 packet French onion soup mix
  • 4 cloves garlic, minced

  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Season the beef chuck roast generously with salt and pepper and pat dry.
  3. In a large oven-safe pot, heat the olive oil over medium-high heat and sear the roast on all sides until browned (about 3-4 minutes per side).
  4. Remove the roast and set aside. In the same pot, add sliced onions and cook until caramelized (about 10 minutes), stirring occasionally.
  5. Stir in minced garlic and cook for an additional minute.
  6. Add beef broth and French onion soup mix, stirring to combine and scrape up any browned bits.
  7. Return the seared roast to the pot, ensuring it is submerged in the liquid.
  8. Cover the pot and transfer it to the preheated oven. Roast for 3-4 hours or until the meat is fork-tender.
  9. Remove from the oven, let it rest for a few minutes, and serve garnished with fresh thyme if desired.

Notes
