Description

A comforting keto-friendly soup that combines ground beef, cheddar cheese, and cauliflower for a rich, creamy experience without the carbs.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup cauliflower florets
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat a large pot or Dutch oven over medium heat and add the ground beef. Brown it evenly and drain excess fat.
  2. Add the diced onion and minced garlic to the pot. Sauté for 3 to 4 minutes until the onions are translucent.
  3. Pour in the beef broth and bring to a gentle simmer, scraping any browned bits from the bottom of the pot.
  4. Add the cauliflower florets and cook for 5 to 7 minutes until tender.
  5. Stir in the heavy cream and then add the shredded cheddar cheese, stirring until melted and smooth.
  6. Add Worcestershire sauce, season with salt and pepper, and stir gently.
  7. Let the soup simmer for a few more minutes until heated through. Serve hot, garnished with chopped green onions.

Notes

For a silky finish, use an immersion blender to blend part of the soup. To make it dairy-free, substitute heavy cream with coconut milk and use dairy-free cheese.
