- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup cauliflower florets
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat a large pot or Dutch oven over medium heat and add the ground beef. Brown it evenly and drain excess fat.
- Add the diced onion and minced garlic to the pot. Sauté for 3 to 4 minutes until the onions are translucent.
- Pour in the beef broth and bring to a gentle simmer, scraping any browned bits from the bottom of the pot.
- Add the cauliflower florets and cook for 5 to 7 minutes until tender.
- Stir in the heavy cream and then add the shredded cheddar cheese, stirring until melted and smooth.
- Add Worcestershire sauce, season with salt and pepper, and stir gently.
- Let the soup simmer for a few more minutes until heated through. Serve hot, garnished with chopped green onions.
Notes
For a silky finish, use an immersion blender to blend part of the soup. To make it dairy-free, substitute heavy cream with coconut milk and use dairy-free cheese.
