Description
A hearty, low-carb soup that brings all the flavors of a cheeseburger without the heavy bread or starch.
Ingredients

- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup cauliflower florets
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat a large pot or Dutch oven over medium heat and add ground beef. Cook until browned, breaking it into pieces.
- Add diced onion and minced garlic, sauté for 3-4 minutes until translucent.
- Pour in beef broth and bring to a gentle simmer, scraping any browned bits from the pot.
- Add cauliflower florets and cook for 5-7 minutes until tender.
- Stir in heavy cream and shredded cheddar cheese until melted and smooth.
- Add Worcestershire sauce, and season with salt and pepper to taste.
- Simmer for a few more minutes, then serve hot, garnished with chopped green onions.
Notes
For a smoother texture, you can use an immersion blender to puree some of the soup.
