Description

A cozy, one-pot Lasagna Soup that combines all the comforting elements of traditional lasagna into a hearty soup perfect for chilly evenings.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 pound ground beef or sausage
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 8 ounces lasagna noodles, broken into pieces
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Sauté the chopped onion and minced garlic until translucent (about 3-4 minutes).
  2. Add the ground beef or sausage, cooking until browned. Drain any excess fat.
  3. Incorporate the crushed tomatoes and broth, then add the broken lasagna noodles, oregano, basil, salt, and pepper. Bring to a boil and then simmer for about 15-20 minutes until noodles are tender.
  4. In a separate bowl, mix the ricotta cheese with a pinch of salt and pepper. Set aside.
  5. Serve the soup topped with a dollop of the ricotta mixture, mozzarella cheese, and fresh basil.
