- 4 chicken thighs
- 2 cups green beans
- 4 tbsp butter
- 2 lemons (juiced and zested)
- 4 cloves garlic (minced)
- Salt and pepper to taste
- Fresh parsley for garnish
- Olive oil (for searing)
- Broth or water (optional, for extra sauce)
Instructions
- Preheat your oven to 400°F (200°C).
- Heat a large, ovenproof skillet over medium heat and add the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.
- Pat the chicken thighs dry and season with salt and pepper. Sprinkle with lemon juice and zest.
- Place the chicken thighs skin side down in the skillet. Cook for about 5 minutes until deeply golden brown. Flip and cook the other side for another 5 minutes.
- Add the green beans to the skillet and gently coat them in the buttery garlic mixture.
- Transfer the skillet to the oven and bake for 20-25 minutes until the chicken reaches 165°F.
- Remove from the oven and let rest for a few minutes. Garnish with fresh parsley before serving.
Notes
For added flavor, stir in capers after baking or make it spicy with red pepper flakes.
