Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Cream the softened butter and sugar together until light and fluffy.
  3. Add the egg, vanilla, lemon juice, and lemon zest, mixing well.
  4. Stir in the flour, baking powder, salt, and baking soda until just combined.
  5. Using a cookie scoop, portion out dough balls onto the baking sheet with space in between.
  6. Bake for about 7 minutes until slightly golden at the edges.
  7. Cool on the baking sheet for 10 minutes.
  8. Prepare the glaze by mixing powdered sugar and lemon juice until smooth.
  9. Drizzle glaze over cooled cookies and let set completely.
