Ingredients

- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 cup sun-dried tomatoes
- 1 cup heavy cream
- 1 cup parmesan cheese, grated
- Salt and pepper to taste
- 8 ounces pasta of choice (like fettuccine or penne)
- Fresh basil, for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat until it shimmers.
- Season chicken breasts with salt and pepper on both sides, then place in the skillet and cook for 5-7 minutes until golden brown. Remove and set aside.
- Add sun-dried tomatoes to the skillet and sauté for a couple of minutes.
- Pour in the heavy cream and bring to a gentle simmer. Stir in grated parmesan cheese until melted.
- Cook pasta according to package instructions, then drain, reserving some of the pasta water.
- Toss the cooked pasta into the sauce, adding reserved pasta water if too thick.
- Slice chicken and arrange on top of the pasta, garnishing with freshly chopped basil.
- Serve warm.
