Description

Ingredients

  • 2 cups cooked and diced chicken breast
  • 8 ounces penne or rotini pasta
  • 1 cup halved cherry tomatoes
  • 1 medium cucumber, diced
  • 1/4 cup finely chopped red onion
  • 1 cup feta cheese crumbles
  • 1/2 cup pitted kalamata olives
  • 3 tablespoons extra virgin olive oil
  • Kosher salt
  • Freshly ground black pepper
  • Juice of 1 lemon
  • 1 clove garlic, minced
  • 1 tablespoon chopped fresh parsley or basil
  • A pinch of red pepper flakes (optional)

Instructions

  1. Season the chicken with salt, pepper, and garlic powder. Heat a skillet over medium-high heat with olive oil. Cook the chicken until golden brown, about 5 to 7 minutes. Let it rest before dicing.
  2. Bring a pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and do not rinse.
  3. In a large mixing bowl, combine the hot pasta, chopped tomatoes, cucumber, red onion, feta, olives, and diced chicken.
  4. Drizzle with olive oil and lemon juice, and add minced garlic, herbs, and seasoning. Toss gently.
  5. Chill for at least 30 minutes before serving to allow flavors to meld together.
